“It’s OK to have your eggs in one basket as long as you control what happens to that basket.” Elon Musk
There was no basket control during our fun, first annual Easter egg hunt last Sunday. 20 grownups scurried about the yard searching for hidden (plastic) Easter eggs…..some were so obvious placed out in the open, but were missed on the frantic first pass. David hid the eggs and wasn’t going to participate. Our next-door neighbor, Judy, heard this and so decided to make and hide for David his own little baskets of goodies ~ so eggy nice of her.
Some of our guests brought their own decorated baskets for the hunt and after it was over, with all sitting around counting their eggs and discovering its surprises…..there was enough sweets collected to have opened a candy stand in front of the local school.
David had hidden a gold and a silver bunny he created and inserted into two of the eggs; each with a corresponding prize … the gold winner being one of our Mexican friends – you could say they had the home court advantage It was fun for all.
Ahhh ~ the food. Nobody missed the traditional ham since it was replaced with a very savory Oaxaca Chicken Mole. There were two types of tamales: chicken and rajas & cheese. These are the best Lakeside and made by Fatima, whose tamale-making class I attended. I made roasted tomatillo salsa, fresh shrimp ceviche, and radish salad. David’s 50+ fabulous deviled eggs topped with shrimp, olives or cilantro were a big hit as were his chocolate chip cookies . . . AND that was just our contribution.
As our guests arrived bearing: bowls of green salad, two types of pasta salad, a frittata, garbanzos salad and a few other dishes ~ there were too many to keep track of, but I think I tasted them all…….served up with plenty of vino and two pitchers of Jeanette’s famous Sangria recipe.
Desserts were over the top……..tres leches cake, flan, chocolate cake, apple pie, miniature scones, cupcakes and brownies, fruit-filled cookies, and “prayer waffles” with cajeta for filling and oh yeah ~ Girl Scouts cookies (Savannah Smiles)!
The food selection qualified as fit for a sumptuous hotel brunch.
Our friend, Erin, arrived Friday afternoon loaded with packages from NOB. Little did my little sugar addict, David, know that one of those packages contained something especially just for him…..his beloved “PEEPS” ~ he hit the roof with joy (not a sugar high).
On the way home from the airport I asked Erin, “Are you hungry?” with the hope that she was. This way we could stop for a bite at one of our favorite Carretera pit stops ~ Los Milagros de Dalia. It’s a huge restaurant-style cafeteria where they wrap all their savory offerings in a buttery, freshly made flour tortilla……….a taste of heaven. Erin remarked on how soft and light the tortillas were. 6 small hand burritos, a side of queso fresco cheese, 2 soda pops, and a beer cost under $15.
Dinner that night was at our favorite restaurant – the infamous one – where I was told as being too loud . . . Teocintle Maíz, as always, did not disappoint. We secretly mentioned to the owner, Ricardo, it was Erin’s birthday. At the end of the meal, a beautiful slice of moist chocolate cake was presented along with the entire restaurant staff singing “The Mañanitas” to a surprised and joyful Erin.
Erin’s only request for her visit was a trip to the Galo Goat Farm and we happily complied. She totally enjoyed her experience as she fed and milked and herded the goats…..she might be an OC girl, but with a big country ❤️ . This was our fourth visit, but each time we get more enjoyment of the farm and admire the new changes/growth/additions… the goats, the wonderful product tasting and overall company, and of course, Juan Diego and Laura’s passion and vision.
And there are now many pregnant nanny goats and next month will see a bunch of new kids on the farm.
